Tuscan Kale Soup

Kale is a wonderfully nutritious green. It is great added to soups, juiced or blended into smoothies. You can also chop it up into tiny pieces and add it to coleslaw’s and green salads. Steaming it and serving it with butter is also another option for enjoying this veggie. Here is one of our favorite recipes for using Kale:

Tuscan Kale Soup

  • 6cup Chicken Broth
  • 1 med Onion
  • 3 Organic sausage Links
  • 3 Large Potatoes
  • ½ bunch Green Kale
  • ½ Cup Milk
  • ½ tsp Oregano
  • ½ tsp thyme
  • ½ tsp Basil Salt to taste

Wash and rinse ½ bunch Kale. Remove middle vein and chop into small strips. Chop sausage and onions into small pieces. In large soup pot, brown chopped onion and sausage in 1-2 Tbsp olive oil over medium heat. Add chicken broth, cubed potatoes, and herbs. Cook until potatoes are nearly soft, 35-40 minutes approximately. Add kale and milk. Cook for another 5 minutes. Serve and enjoy.
