Mashed Potatoes

10-Minute “Healthy Steamed Potatoes*potatoe mashed

 

Ingredients: (wording slightly modified)

2 medium-sized Potatoes, scrubbed, rinsed and with deep eyes or bruises cut away

3 TBS extra virgin olive oil

1 medium clove garlic

Sea salt and pepper to taste

 

1. Pour 2 inches of water into steamer base and turn on steamer/stove top to heat water.

2. Press or chop garlic and let it sit for at least 5 minutes to maximize phyto-nutrient value.

3. Cut potatoes into ½-inch cubes with skin on to preserve nutrients.

4. Place potatoes in steamer basket for 10 minutes. They are done when a fork easily penetrates through the skin.

5. Transfer potatoes to a bowl, mash with fork and toss remaining ingredients into mixture until evenly combined.

Makes 4 small side servings
